I'd say it would feed 5-6 people. And 45 mins would be ok, probably. As long as you cook the sausage fully to start, it'll be fine.

How many people does it serve?

Does it really need "an hour or two" to simmer? Would, say, 45 minutes be enough?

I'm going to make this for guests on Thursday.
